Cedar Plank Salmon & Horseradish Dill Sauce

You won’t have to wait long for this fish to cook on the grill. As Head Pitmaster Shannon Snell explains, fish is a fast cook. He says the longest part of this recipe is soaking your cedar planks in water, which should be done for at least 1 hour, just to make sure they don’t burn on the grill.

Instructions

  1. Preheat your grill to 450°F.
  2. In a bowl, add mayo, dijon mustard, lemon juice, garlic powder, honey, and dill. Mix with a whisk and refrigerate for at least 30 minutes.
  3. Season the salmon with pepper, salt, and paprika.
  4. Place the wood plank directly into the grill and allow it to heat up. The plank will be ready when you start to hear the wood crackle under the heat.
  5. Place the salmon on the plank and close the grill lid.
  6. Let the salmon cook for about 12-15 minutes until the internal temperature reaches 130 degrees, and remove from the grill.
  7. (OPTIONAL) Grill sliced lemon alongside salmon for garnish.
  8. Allow salmon to rest for 5 minutes, top with sauce and enjoy.
