Rum Candied Bacon Pancakes

Sweet with just a bit of a bite. That describes these Rum Candied Bacon Pancakes perfectly. Take fluffy flapjacks and load them with sugary, but peppery bacon and you’ve got a recipe good to the last drop of that warm maple syrup. Break out the griddle, we’re havin’ BBQ for breakfast.


Try this Sweet Candied Bacon Pancakes Recipe

If you’re a person who loves sweet and savory breakfasts, this is a match made in heaven for you. Irish Butter and Rum give these pancakes their extra special flavor, while the cayenne and brown sugar add just enough heat to warm you up with every bite. Feel free to remove the rum if you’re makin’ flapjacks for the kids, but don’t worry, the alcohol will cook off on that hot griddle.

Instructions

  1. Turn your grill to high and place griddle down to heat up for 20 minutes.
  2. In a mixing bowl, mix the dry pancake ingredients together. In a separate bowl, combine the wet ingredients, and slowly whisk into the dry mixture until well combined.
  3. Place the bacon on the griddle and cook until it is almost done. Sprinkle brown sugar, pepper, and cayenne on top of the bacon and allow it to caramelize, place it to the side and allow it to cool. Once cool, chop the bacon.
  4. Ladle pancake batter in 1-2 inch circles onto a greased griddle, and immediately top each one with chopped bacon allowing it to cook down into the batter.
  5. Flip the pancakes once the top batter starts to bubble.
  6. Serve pancakes with hot maple syrup and butter. (Optional)
