Recipes for 52 Min. Baby Backs & Cheesy Potatoes that won on Smoked!

You Will Need:

Baby Back Ribs

  • 1 – 2.5 lb baby back rib
  • 1/4 cup of Sonny’s Rub
  • 4 cups of rendered duck fat
  • 1/2 cup of Sonny’s Sweet Sauce


Cheesy Potatoes

  • 1LB. new potatoes
  • ½ cup heavy cream
  • ½ cup margarine
  • ¼ cup white onion
  • 1 cup chopped bacon
  • Salt and pepper
  • Sonny’s pork rub
  • 1 cup Gruyere cheese
  • 1 cup sharp white cheddar


Baby Back Ribs

  1. Remove the membrane from the backside of the baby back ribs.
  2. Evenly coat the front and back of the baby back ribs with Sonny’s Rub or your favorite BBQ rub.
  3. Melt the duck fat in a heavy-bottomed pot with high sides. Heat the duck fat to about 325 degrees F.
  4. Start your smoker using your favorite wood for flavor and once the pit temperature reaches 225 degrees put the ribs on.
  5. Once the rub adheres to the rib (about 10 minutes) remove it from the smoker and place it in the duck fat (20-30 minutes).
  6. Using a food thermometer, temp the ribs. Once the internal temperature reaches 195 degrees F remove the ribs.
  7. Sauce the front and back of the rib and place back on the smoker to caramelize (10 minutes).
  8. Serve and enjoy!

Cheesy Potatoes

  1. Preheat smoker to 250 degrees F.
  2. Cook bacon & set aside to cool.
  3. Wash and chop potatoes into ½ inch pieces.
  4. Place the potatoes, heavy cream, chopped bacon, and butter in a large bowl.
  5. Add salt and pepper and toss ingredients until well-coated.
  6. Layer two large sheets of foil flat on the table.
  7. Place the potato mixture on the foil, and close the foil to make a pouch.
  8. Cook mixture in smoker for about 2 hours until potatoes are tender
  9. Add the bacon, both cheeses and place back in the smoker for 20 additional minutes.
  10. Remove and sprinkle with pork rub.
  11. Serve and enjoy!
