The Smoke Ring

You can taste properly done Bar-B-Q, but you can see it too. Look for that 1/4’ of pink color just under the surface. That’s the ’Smoke Ring’. That’s the sign of authentic Bar-B-Q. The meat was cooked over real hardwood for a long period of time.

Today, we still use the same type of smoker that Sonny used back in 1968.

We go through over 500 tons of oak in our 129 locations every year. That’s over 500 cords for those who know their wood. That’s a lot of wood. But it’s the only way to make enough smoke for authentic Sonny's Real Pit Bar-B-Q.
